The wine region

The region of Jerez has long provided wines for kings and courts, and centuries of practice have resulted in some of the best wines in the world. Or at least, some of the most spectacular. The famous sherry wines produced from the Ximenez grapes, have long been appreciated for their flavor and body.Located just an hour outside of Seville, the region is one of the southernmost in Spain.

Local gastronomy

The gastronomy of Jerez is one of the most impressive in andalusia. So much so, in fact, that many dishes from around the country are referred to as "al jerez" or "a la jerezana" for mixing with the extraordinary broths of the region. The flavors that result from mixing great seafood with the fine wines is incomparable, and so are other dishes made from ham, Caña de lomo (a type of spicy sausage), black sausage, chorizo, etc., that can accompany the delicious Fino wines, amontillados or palos.

From the agricultural, vinicultural and ranching traditions, the countryside is ripe for producing the basic ingredients for the recipes, for example the Jerez Gazpacho, ajo caliente, riñones al jerez, Berza de Tagarninas (Spanish Oyster Plant), oxtail, rabbit, and small game.

From the pastry shelf, try the milhojas (Millefeuille), torrijas (Spanish French Toast), Tocinos del Cielo (an egg-based dessert), and don't forget to try some of the sweets made in the convents, such as pestiños (Honey-coated pastry), marzipan, and the Amarguillos from the Clarisas de San José.
